Preheat the oven to 425°F
olive oil or cooking spray
1 cup crème fraiche
3 Tbsp. Dijon mustard
1 Tbsp. grainy mustard
1 Tbsp. fresh lemon juice
1 finely minced shallot
1 Tbsp. chopped capers
salt and pepper to taste
4 – 8 oz. cod filets
Brush a rimmed baking sheet with olive oil or spray the pan. In a bowl, whisk the crème fraiche, mustards, shallot, capers, salt and pepper. Lay the cod on the sheet pan. Spread the Dijon mixture evenly over each cod filet. Bake 10-15 minutes.
