5 lbs. broccoli crowns, chopped
2 onions, chopped
¼ cup olive oil
1 gallon vegetable stock
1 pound cheddar cheese, grated
3 qt. light cream
salt and pepper to taste
Sauté onions in olive oil until golden brown (approximately 10 minutes). Add broccoli and sauté for another 10 minutes. Add stock and cook until reduced by half (simmer for approx. 20 minutes). Finish with cheese and light cream. Season to taste with salt and pepper. Enjoy.
