Mango, Jicama & Avocado Salad with Citrus Vinaigrette

Ingredients

2 heads romaine lettuce, washed and chopped
1 bunch watercress, discard bottom about 1-2 inches
2 ripe mangos, peeled and sliced
1 medium jicama, peel and cut into matchsticks
2 ripe avocados, sliced
1 cup olive oil
¼ cup orange juice
1½ Tbsp. lime juice
1 tsp. sherry vinegar
1 tsp. chili powder
1 tsp. honey
salt and pepper

Method

In a blender, add citrus juice, vinegar, honey, chili powder, and a pinch of salt and pepper. Turn on and slowly add olive oil.

Put mango and jicama in a large bowl, and lightly coat with some of the dressing. Let sit for 20 minutes. In a separate bowl, mix romaine and watercress. Add avocado, jicama, and mango and stir gently to combine. Drizzle with remaining dressing and serve.
