1 ½ quarts strawberries, stems discarded
5-6 cups granulated sugar (measured into a bowl)
1 box pectin
2 Tbsp. pomegranate syrup
1 tsp. lemon juice
Put strawberries and lemon juice into a medium saucepot. Lightly crush the strawberries with a potato masher (or whisk). Stir in pectin. Place pot on the stove and bring to a hard, rolling boil. Quickly stir in sugar. Bring back up to a rolling boil and boil for 1 minute. Remove from heat and skim off all foam. Add pomegranate syrup. Let cool.
