Preheat the oven to 350ºF. Grease a 9-by-5-inch loaf pan.
⅓ cup butter or margarine, softened
1⅓ cup sugar
2 eggs
1 cup pumpkin or winter squash, cooked, mashed
¼ cup water
1⅔ cups flour
¼ tsp. baking powder
1 tsp. baking soda
¾ tsp. salt
¾ tsp. nutmeg
½ tsp. cinnamon
½ tsp. cloves
½ cup walnuts, chopped
½ cup seedless raisins
Cream the butter and sugar. Beat in the eggs with an electric mixer. Beat in the pumpkin and water until smooth. Sift the flour, baking powder, baking soda, salt, nutmeg, cinnamon, an cloves together. Beat the dry ingredients into the pumpkin mixture. Stir the walnuts and raisins into the batter. Place in the prepared pan and bake at 350ºF for approximately one hour.
