From Our Kitchen
2 cups cooked red quinoa, seasoned
2 ripe avocados, diced
1 red grapefruit, peeled and segmented
1 blood orange, peeled and segmented
1 small jicama, peeled and cut into matchsticks
½ bunch romaine, chopped
1 mango, diced
pomegranate seeds
pistachios, shelled
salt and pepper
Combine all salad ingredients.
Goes well with Garam Masala Dressing.
