Preheat oven to 425ºF
1 lb. yams, scrubbed and cut into ⅓-inch rounds
4 Tbsp. olive oil, divided
¼ cup fresh cilantro, chopped
3 Tbsp. shallots, finely chopped
2 Tbsp. fresh orange juice
1 Tbsp. fresh lime juice
1 tsp. honey
¼ cup raw pistachios, shelled, roasted and chopped
2 Tbsp. golden raisins
salt and pepper to taste
Line a rimmed baking sheet with foil. Place yams and 1 Tbsp. oil in a large bowl. Season with salt and pepper and toss to evenly coat. Arrange yams on prepared sheet in a single layer and roast until tender and lightly browned, around 25 minutes.
Meanwhile, whisk remaining 3 Tbsp. oil, cilantro, shallot, orange juice, lime juice, and honey in a small bowl. Season to taste with salt and pepper.
Transfer yams to a platter. Drizzle salsa over and sprinkle with pistachios and raisins
