3 Tbsp. butter or margarine
⅔ cup radishes, ¼-inch slices
2 cups zucchini sticks, 2- to 3-inch
2 cups summer squash sticks, 2- to 3-inch
½ tsp. salt (or pepper to taste)
⅛ tsp. ground pepper
Melt the butter in a large frying pan over medium heat. Add the scallions and radishes and sauté for 1 minute. Add the zucchini, summer squash, salt, and pepper. Continue to sauté for 3 to 4 minutes longer or until the radishes are pink and the vegetables are crisp-tender.
