Preheat the oven to 400°F. Grease a cookie sheet.
3 Tbsp. butter or margarine
¼ cup onion, finely chopped
1½ cups butternut squash peeled, uncooked, and grated
½ cup bread crumbs
1 egg, slightly beaten
¼ tsp. salt
1 tsp. curry powder
⅛ tsp. cayenne pepper
Melt the butter in a small frying pan. Add the onions and sauté until soft but not brown. Place the onion and butter in a mixing bowl and add the remaining ingredients. Mix thoroughly.
Form the mixture into bite-sized balls (a little smaller than a cherry tomato). Place on a greased cookie sheet. Bake in the upper third of the oven at 400°F for about 15 minutes or until lightly brown. Turn once after 5 minutes. Serve hot on toothpicks.
These are a bit like stuffing balls but they are very spicy. Vary the amounts of curry and cayenne to suit your personal taste.
