Preheat oven to 350°F
1 uncooked pie crust
1½ lbs of spinach
½ lb bacon or ¾ cup of ham
2 tsp. of onion
1½ cups of Swiss cheese
Beat together 4 eggs
1 cup light cream
⅓ cup milk
½ tsp. salt
⅛ tsp. cayenne pepper
Wash and trim off roots and stems from spinach. Place wet spinach in saucepan over medium heat. Heat until wilted, drain and chop. Squeeze as dry as possible, set aside. Cook the bacon until crisp, then crumble and set aside ( cooked, chopped ham may be substituted)
Stir into egg mixture, finely minced onion, shredded Swiss cheese spinach, and bacon. Bake at 350°F for 35 to 40 minutes in uncooked pie crust (deep) To test for doneness, insert a knife as for custard.
