From Our Kitchen
5 lbs. onion
5 lbs. carrot
7 zucchini
7 summer squash
3 lbs. baby spinach
2 lbs. or 1 can great northern beans
1 can tomatoes, diced
3 gal. stock, vegetable or chicken
3 Tbsp. garlic
Saute onions, garlic, carrots, celery, zucchini and summer squash until soft. Add stock, beans and tomatoes and bring to a simmer. Add spinach, finish with chopped herbs, basil, parsley, oregano.
