Stir together:
1 cup cooked mashed winter squash
1 tsp. of melted butter
1 Tbsp. of milk
1 beaten egg
Mix together and stir into above 1½ cup flour
2 Tbsp. sugar
¾ tsp. salt
2½ tsp. baking powder
1 tsp. nutmeg
1¼ tsp. cinnamon
Stir in1 tsp. Melted butter 1 Tbsp. milk. Melt enough shortening and butter (in equal amounts) in frying pan to just cover the bottom of pan. Fry pancakes until brown on both sides. Serve plain with butter as a side dish with dinner or with confectionery sugar or syrup for breakfast or brunch.
