Arugula Pesto
Serves 8
Ingredients
- 2 Tbsp. chopped garlic
- 2 cups romano cheese, grated
- 3/4 cup roasted pistachios
- 5 cups baby arugula, packed
- 1 cup olive oil
- salt and pepper
Put garlic, pistachios, and cheese in a food processor. Pulse until finely chopped. Add arugula and olive oil and pulse. Season to taste with salt and pepper. Enjoy.
